250gm diced, Skinless, boneless chicken breast
1 tablespoon ginger/garlic paste
1 teaspoon ground black pepper
1 tablespoon oil
1 green sweet pepper
1 red sweet pepper
1 onion
2 tomatoes cubed
10 (10 - 12 inches) wheat flour tortillas
½ cup (4 ounces) cheddar cheese
½ cup Monterrey jack cheese or any cheese you like
1 cup sour cream
Toss the chicken with ginger/garlic paste, ground back pepper and salt. Roughly chop the sweet pepper and cube the onion. Shred the
cheeses
Preheat oven to 175 degrees C
Heat pan on a medium heat and stir fry the chicken until no longer pink, then add the vegetables except tomatoes and continue stir frying for 5 minutes, remove from heat
Layer the chicken mixture with the tomatoes on the five tortillas topping with the cheeses then place on top another tortilla on each to cover so that they look like five tortilla sandwiches.
Place onto a baking sheet and bake until the cheeses have melted about 10 minutes
Divide each qaesadilla into 4 or 6 pieces, top your qaesadillas with the sour cream, and enjoy
