Most of the Swahili dishes are slow cooked, if you have no time then they are not for you. The recipes can be modified for faster cooking but the taste will not be the same. We use freshly squeezed Coconut milk and cream, you could use canned or powder but the taste is different and not so good. Main spices include cardamom, cloves, cumin, cinnamon, black pepper, ground coriander, nutmeg and curry powder.
We do not use cheese in our cooking.
